I suspect that a few of my BBQ friends will attempt to have my BBQ Man Card revoked for using liquid smoke, let along writing a review and advocating the use of it. But just as adding BBQ sauce to the crock pot with your chicken doesn’t give you barbecued chicken adding liquid smoke to your food doesn’t give you smoked foods.
Over the years I have avoided the use of liquid smoke because most of the liquid smoke products are “enhanced” with chemicals, molasses and vinegar. Sure they might burn some wood, but the finished product you find on the store shelf isn’t all that great to taste. Adding most liquid smoke products to foods is pretty much the same as adding bacon bits to your salad and thinking it’s really bacon.
This concentrated liquid smoke is unique. Rich hickory flavor adds a wonderful, smokey flavor to all your favorite foods.
I keep the juices when I smoke pork butts and brisket so I can add smoke flavor to other dishes when I can add smoke flavor to other dishes I cook. Straining and then chilling before removing the fat takes a little time, but the results are worthwhile. For people without a smoke though this is not a process they can use. Although I’ll continue to save the juices on occasions when I need a little smoke flavor I’m going to be using Lazy Kettle Hickory Liquid Smoke.
I recently heard from Lawrence Ames, President of Honest Foods, the distributor of Lazy Kettle Brand Liquid Smoke and other specialty food items, asking if I wanted to give it a try. I said yes and soon received my bottle. According to Lawrence the difference between Lazy Kettle Brand and other liquid smokes is there is nothing added, it’s just smoke and water.
Hickory wood mixed with a touch of mesquite is burned a low temperatures. The smoke passes through a chamber that has a stream of distilled water running through it. The water picks up the smoke flavor and is then filtered to remove any solids before it is bottled. This stuff tastes like smoke. It’s highly concentrated and a little goes a long way.
A small drop mixed with ketchup makes a fantastic condiment for burgers and french fries. A few drops in a pot of beans adds the smoke flavor enhancement that make beans the perfect side dish for just about anything.
Let’s get something straight, I’m not advocating that liquid smoke be your replacement for the real thing. If you’ve got a smoker then smoke our beans. But on the occasions where you want some smoke flavor and smoking something isn’t a possibility then Lazy Kettle Brand Hickory Liquid Smoke is a viable option.
