Take a look at the chart above bacon fanatics and know that the reason pork belly prices are rising faster than just about any other pork product. Pork belly prices are driven by the demand for bacon. In 2000 bacon was only 76% of the cost of boneless pork chops. In June of this year bacon is 16% higher than those same boneless pork chops. All of outdoor cooking enthusiasts understand and appreciate the importance pork has on our grills and the over use of bacon is making things really expensive for those of us who like to cook a pork belly every once in awhile.
