Pedernales River Chili

Ingredients
  • 4 lb coarsely ground chili meat
  • 1 large onion, chopped
  • 2 cloves garlic
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 2 tablespoon chili powder
  • 1½ cups canned whole tomatoes, drained
  • 2 to 6 dashes Tabasco
  • Salt to taste
  • 2 cups hot water
Instructions
  1. Saute meat, onions, and garlic in large, heavy frying pan or Dutch oven.
  2. Add oregano, cumin seed, chili powder, tomatoes, Tabasco, salt, and hot water.
  3. Bring to a boil, lower heat and simmer for approximately 2 hour
  4. Skim off fat during cooking
