Grilled Lobster Tails Smothered In Cascabel Chili Butter

Ingredients
  • 1 tablespoon olive oil
  • ½ cup finely-chopped onion
  • ¼ teaspoon cascabel chili powder
  • 1 tablespoon ancho chili powder
  • 2 tablespoons fresh lime juice
  • ½ pound unsalted butter, softened
  • Salt to taste
  • Freshly-ground black pepper to taste
  • 8 Maine lobster tails
  • Olive Oil, for brushing
Instructions
  1. Heat 1 tablespoon olive oil in a small saucepan over medium heat. Add onion and cook until soft. Add cascable and ancho powder and cook for 1 minute, let cool. Fold onion mixture into softened butter, add lime juice and season with salt and pepper to taste. Place in a bowl and refrigerate until firm.
  2. Preheat grill.
  3. Brush lobster tails with oil and season with salt and pepper. Place meat-side down and grill 3 to 4 minutes or until cooked through. Remove from heat and top immediately with butter.
