Gregg Chili

Gregg Chili

Ingredients
  • 1 lb dried pinto beans
  • 1 teaspoon salt
  • 2 slices salt pork
  • 6 tablespoons vegetable oil
  • 6 lb coarsely ground beef or game
  • 9 onions chopped
  • 4 14½ oz cans tomatoes
  • 2 tablespoons salt
  • 6 cloves garlic, minced
  • ½ cup chili powder
  • 4 teaspoons cilantro
  • 2 teaspoons sugar
  • 2 teaspoons Tabasco
  • 6 jalapeno peppers, chopped
  • 2 teaspoons cinnamon
Instructions
  1. Simmer beans in water with salt and salt pork until cooked
  2. In a 12 quart pot, heat oil and slowly brown meat and onions.
  3. Add all remaining ingredients and simmer 1 hour.
  4. Stir in beans and simmer 30 minutes, stirring occasionally
