Instructions
  1. Start by making the green sauce: place the herbs, chilli, rice vinegar, caster sugar, lime juice and fish sauce into a food processor and whizz until finely chopped. Set aside.
  2. Now put the prawns in a bowl with the rest of the ingredients and allow to marinate for at least 15 minutes. Heat a barbecue or griddle pan to hot then cook the prawns for 40 seconds or until they turn from grey to pink. Serve immediately with the green sauce and a squeeze of lime.
