Spicy Teriyaki Glazed Salmon W Cucumber-Green Onion Relish

Ingredients
Glaze
  • ¼ cup mirin
  • ¼ cup sake (plus)
  • 3 tablespoons sake
  • ¼ cup dark soy sauce (plus)
  • 3 tablespoons dark soy sauce
  • 1 teaspoon sugar
  • ½ teaspoon freshly-grated ginger
  • 3 garlic cloves (finely chopped)
  • 1 fresh red Thai chili (finely chopped)
Salmon
  • 4 salmon fillets - (6 oz ea)
  • Salt (to taste)
  • Freshly-ground black pepper (to taste)
Relish
  • 1 large cucumber (peeled, diced)
  • ¼ cup finely-sliced green onion
  • 2 tablespoons rice vinegar
  • 1 tablespoon peanut oil
  • Salt (to taste)
  • Freshly-ground black pepper (to taste)
Instructions
  1. Combine all glaze ingredients in a small saucepan and bring to a boil. Remove from heat and let cool.
  2. Preheat grill.
  3. Season the salmon with salt and pepper to taste. Grill for 3 to 4 minutes on each side. Brush with the glaze during the last 1 minute of cooking. Serve with the cucumber-green onion relish.
  4. Combine cucumber, onion, vinegar and oil in a small bowl and season with salt and pepper to taste. Let relish for sit 30 minutes.
  5. This recipe yields 4 servings.
